Wheatberry Salad I (Recipe)
Wheatberries are whole grain wheat. Like this:
Wheatberry Salad I
1 c wheatberries (Whole grain wheat)
1 pint grape tomatoes, halved
2 oz crumbled feta
1/4 c slivered fresh basil
Vinaigrette
1 1/2 T balsamic vinegar
1 1/2 t red wine vinegar
1/4 t salt
1/8 t black pepper
6 T olive oil
Either:
1) Soak wheatberries overnight in 3 1/2 c water. Drain, reserving soaking liquid. Return wheatberries to pan and add soaking liquid plus enough to return water to 3 1/2 cups. Boil 50 minutes until tender. Drain.
Or
2) Forget to soak wheatberries. Swear. Fill pan with water and boil wheat for an hour and a half, strirring occasionally, until tender.
While warm, toss wheatberries with half of vinaigrette. Let cool. Then add tomatoes, feta, basil and remainder of vinaigrette. Salt and pepper, as desired.
Note: This can either serve four or six or eight, depending upon what else you offer. Or I can eat the entire thing alone in two days.
'scuse the ignorance, but what's a wheatberry?

They're divine, that's what.

You soak too!?!?!?!?! Yippee! I knew I liked you for more reasons then your insatiable desire to give birth again :-).
The recipe sounds divine. I've soaked everything from almonds to buckwheat but have yet to try the wheatberries. Now that I have an excuse, I'll get right on it.
Thanks!

Are wheatberries just whole wheat? Come on, give us Europeans a shove in the right direction :)

Wheat's so bad for you, kitten. How about a nice cornish game hen?

Sounds delicious. Have you tried the recipe for Summer Wheatberry Salad in the July issue of Fine Cooking?

My partner likes to use wheat or rye berries in place of bulgur in tabouli too.

Um, the co-op didn't have wheatberries so I bought spelt berries. They are soaking now. Am I making a big mistake?

I'm making a rather similar salad for our block party, using couscous instead of wheatberries and throwing in cucumber...because we have so much that we are eating them in everything I make. How about a cucumber on your oatmeal, kids? But I will try with wberries next...yum.
